I love Christmas! I love the parties. l love the togetherness. Let’s be honest… I REALLY love the food. In the spirit of the holidays, I decided to try out a new recipe. Who doesn’t love a special sweet treat, and this creamy white chocolate smooth and crunchy peppermint infused bark is SO so simple.
Here are the ingredients.
Yes. That’s it.
1 lb of white chocolate
1/4 tsp of peppermint extract
1 handful of peppermint candies (likely a 1/4 cup)
The chocolate had a recommendation for melting the bricks in the microwave, but I decided that if I had a double boiler, that would work best.
I did not have a double boiler. I improvised. That is allowed.
I just put about 1/2 an inch of water in a sauce pan a little bit bigger than the sauce pan I was using to melt my chocolate.
You don’t have to do this. You can follow the box and microwave if you want. I like to think outside the box. Oh man. That was a lame joke. I regret it, but I refuse to delete it! I’m moving on!
So, melt the chocolate until it is… melted. Stir it frequently.
Meanwhile, over on a hard surface… Take a good meat mallet and smash up your candies. Don’t treat them like rocks. I barely tapped them, and they broke. Please don’t break your countertops.
Once the chocolate is melted, add the tiny tiny tiny bit of peppermint extract. (Note the bottle warns not to pour near a flame.) That is probably because it has alcohol in it. Don’t freak out. You are adding less than half a teaspoon.
Next, stir in your crumbled candies.
Pour it out onto a wax paper lined cookie sheet. This is an ugly picture. It looks really gross. I cannot help that. I bet a lady who rhymes with Schmioneer Woman doesn’t have ugly pictures like this. I make no apologies. It tastes delicious!
Put it in the fridge for however long you can wait. I only made it 45 minutes.
Break it apart and serve in adorable packaging as gifts, or stuff it into ziplock bags for easy munching later!
This would make a great neighbor gift, and would be fantastic to bring to an office party. I am always looking for nut-free dessert recipes for my kids, and this is definitely our new favorite!
