1- 1/2 lb round steak
¾ C vegetable oil (divided)
1 C soy sauce [edit] We made this with regualr soy sauce, but next time I will definitely use low sodium. It was very salty!
1 C water
1 C brown sugar [edit] I think I could cut this back to 3/4 C as it was veeery sweet also.
1 T fresh minced ginger (plus one big hunk of peeled ginger)
1 T fresh minced garlic
1 small bunch green onions (for flavor)
2 C broccoli

Okay! We butcher our own meat, so we have long flanks of round steak, but I’m sure you could find something similar at the grocery store.

I thaw the meat for a few minutes in the microwave, and then, when it’s still the least bit frozen, I cut against the grain with a sharp knife on the diagonal. (Almost as thin as sandwich meat.) You won’t be able to get it quite that thin, but if that’s your goal, it will be perfect. OH, and it is a million times easier to cut when it’s still a little frozen.

I toss the slices in a bowl with 2 T of cornstarch and 2 T of soy sauce.  I let it sit while I get the white rice cooking in a sauce pan and microwave fresh broccoli in a microwave safe bowl for 3 minutes.

Mince 1 T of garlic and 1 T of fresh ginger. (I grate these with my zester.)

Heat one T of vegetable oil in a sauce pan and add the garlic and ginger. Stir once.

Quickly add 1 C water, 1 C soy sauce and 1 C brown sugar.

Stir and bring to a rolling boil for a few minutes. Turn down to low while you complete the rest of the cooking process.
(TIP: I add one giant hunk of peeled ginger that isn’t minced to the sauce mixture as it all simmers. This infuses into the liquid and makes it soooo yummy.)

After the meat has had a chance to absorb some of the cornstarch, pour remaining vegetable oil into large wok or pan… about ¾ C. Heat oil to medium heat and add meat slices.

Spread them out evenly to avoid crowding. Sear meat on both sides (about 2 minutes.)

Remove meat onto paper towel lined plate and discard oil in pan.

Return meat to pan and cook on med/med high for another 2 minutes or until brown on all sides and no pink is visible.

Add sauce mixture and continue to cook for 1 more minute, and then, reduce heat.

Add sliced green onions, and let simmer for 1 -2 more minutes.

Remove green onion, add steamed broccoli and serve over white rice.

Boy, it sounds pretty complicated, but it really is a breeze!
